Last week, Leah showed us how to make some awesome Peach Salsa!
Next up is some super yummy peach butter. If you’ve never tasted peach butter, it has an extremely fresh and light taste!!! I actually prefer it over apple butter!
This recipe is so easy because you can make it all in your crockpot!!!
This is a great way to use those peaches that were maybe to soft to eat fresh or even can sliced as these are going to be pureed anyway!
CROCKPOT VANILLA PEACH BUTTER
Peaches – enough to fill a 6 quart crockpot
2 Vanilla Beans
1 1/2 cups sugar
Wash your peaches! Next, pit them, slice them, and peel them. I didn’t peel all of my peaches, so you could skip this step if you wanted to. Take the vanilla beans and slice them down the center. Then, scrape out the seeds and throw them into the crockpot, along with the empty pods. Next, add your sugar.
Place the lid on your crockpot. Cook this for about 12 hours on LOW heat, or until the peach butter is reduced to your desired consistency. You will want it to be thick on a spoon and not runny/watery.
To preserve the peach butter, you can process pint size jars in a boiling water canner for 10 minutes. You can also simply freeze it in a freezer-safe container for up to 6 months.
Vanilla Peach Butter is a great spread for scones, toast, or even on pancakes. We loved these on our favorite biscuits!!
